Glass at The Hilton (Sydney)

It was Dee’s birthday last month and given we were both flying this way and that around the globe, it wasn’t until last night that we finally got to catch up for her birthday dinner. I decided on Glass at the Sydney Hilton. It got refurbished and is pretty impressive. I went there for EM’s birthday drinks in Zeta Bar, but this was my first time to Glass.

It surpassed expectations. The service was friendly and efficient and knowledgeable (though there were certainly a lot of them). And the food was close to perfect. I had the Tuna 3 ways for entree which was nice. Dee had the vegetarian tasting plate and really liked it. We both had the Barramundi for main and it was absolutely brilliant. The flesh was perfectly cooked and the skin was crispy. It was on a bed of pea puree, lamb shank and potato that created an amazing combination of flavours.

Desert was amazing. I had the Passionfruit and Lychee souffle with lemongrass ice-cream. I have never eaten such a perfectly cooked souffle, it is truly an art (even better than Aria’s old one and bigger as well 🙂

The decor also deserves a mention. The place has a very interesting fit out that has a lot of unique elements, but they work really well together.
